Thanksgiving Biscotti

Pairing with a love of coffee, tea and all good things, I’m excited to share this tasty biscotti with you! Super easy to throw together and oh so versatile! This is a favorite!

Goodness list:
1.5 cups almond flour

1/4 cup chopped dried cranberries

1/4 cup chopped pecans

3.5 Tbsp maple syrup

2 Tbsp almond milk

1 Tbsp orange juice

1 Tbsp arrowroot powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp ground nutmeg

1/4 tsp sea salt

Preheat oven to 350 degrees. In a mixing bowl, combine all ingredients until well blended. Place dough on a parchment lined baking sheet. With damp hands, form dough into a rectangle about 10” long and 4” wide. Bake in preheated over for 25 minutes. Remove from oven and let cool for an hour. Using a sharp knife, slice into strips 3/4” thick. For longer strips, slice diagonally. Place all the slices on their side. Place back in a 275 degree oven for 15 minutes. Remove from oven and flip all pieces to the opposite side. Bake another 15 minutes. Remove from oven and flip one more time. Turn off oven. Place back in oven with it off and allow biscotti to cool before removing and storing. Brew yourself some coffee and enjoy!

So Good Graham Crackers

Kinda like child’s pose in yoga, these graham crackers meet you where you are and nourish you body and soul. This recipe has the grounding spices of cinnamon and nutmeg; healthy fats and brain power from coconut oil and egg, rainy day blues fighting and immunity support of honey among other good for your soul ingredients. Whether enjoying solo with a cup of coffee or tea, crumbled into your favorite ice cream, making a s’more, or smeared with almond butter, these So Good Graham Crackers will bless your day!

Goodness list: 

2 cups almond flour

1 Tbsp coconut flour

1 Tbsp cinnamon

1 tsp baking soda

1/2 tsp sea salt

1/4 tsp ground nutmeg

2 Tbsp coconut oil (melted)

1 egg

1/4 cup brown coconut sugar plus 1 Tbsp for sprinkling on top

1 Tbsp vanilla

1 Tbsp honey

Let’s do this! Preheat oven to 300 degrees.

Mix the first 6 dry ingredients together. Set aside. In a mixing bowl, beat together the melted coconut oil, egg, 1/4 cup coconut sugar, vanilla and honey. Add the dry ingredients into the wet. Mix until well combined and you have a nice ball of dough. Pour out onto a parchment paper cut to fit a 13x9 half sheet pan. Cut a second piece of parchment paper the same size as the other. Place on top of the dough. Press down a bit to flatten dough into a disc. Using a rolling pin or anything round, roll the dough out to the size of the parchment. Peel away the top piece of parchment. Using a pizza cutter, cut the dough into cracker size of your choice. Lightly prick each cracker a couple times with the tip of a fork. Finally, sprinkle the top of dough with 1 Tbsp coconut sugar. Pop in 300 degree oven for about 20 minutes until golden brown. Crackers will harden as they cool. Break apart and enjoy!!

Fall-y Pumpkin Granola

What are you go-tos with granola?? I, most typically, love snacking on it straight. However, I can sometimes get fancy and sprinkle on top of toast smeared with nut butter. I also love to enjoy it as cereal with almond milk poured on top. This hug of fall is sure love on all your pumpkin needs! Options are endless...

Goodness list: 

1/2 cup pumpkin purée

2 Tbsp unsweetened sunbutter

1/3 cup coconut oil (melted)

1/3 cup maple syrup

1 tsp vanilla extract

2 tsp cinnamon

2 tsp pumpkin spice

1 tsp sea salt

3/4 cup raw pumpkin seeds (pepitas)

3/4 cup raw sunflower seeds

1/2 cup shredded unsweetened coconut

3 Tbsp ground flax seed

1 Tbsp sesame seeds

Let’s get it going! Preheat oven to 325 degrees.

Mix the first 8 ingredients (pumpkin purée, sunbutter, coconut oil, maple syrup, vanilla and spices) together until well blended. Then add in the remaining ingredients. Stir until well blended. Pour granola onto a parchment lined half sheet pan. Spread evenly. Place in preheated oven for 25-30 minutes stirring 2-3 times to ensure even cooking and no burning! Remove from oven. Let cool and enjoy!
